    Fresh Peach Ice Cream

    Makes about fourteen ½-cup servings.

    Ingredients

    • 3 cups fresh ripe peaches, peeled, pitted, and sliced

    • 4 tablespoons fresh lemon juice

    • 1½ cups sugar, divided

    • 1¼ cups whole milk

    • 2¾ cups heavy cream

    • 1½ teaspoons vanilla extract

    Directions

    1. Combine the peaches, lemon juice, and ½ cup sugar. Stir gently and let sit for 2 hours.

    2. Strain the peaches, reserving the juice. Mash or purée half of the peaches. Keep the remaining pieces refrigerated.

    3. Using a hand mixer on low, mix the milk with the remaining 1 cup sugar until dissolved, about 1–2 minutes.

    4. Stir in the heavy cream, reserved peach juice, puréed peaches, and vanilla.

    5. Pour into your ice-cream maker and churn until thickened, about 20–25 minutes.

    6. During the final 5 minutes, add the reserved peach pieces.

    7. Serve immediately for soft ice cream. For firmer ice cream, freeze in an airtight container for about 2 hours. Let it sit at room temperature for approximately 15 minutes before serving.

    Cheesy Sausage Zucchini Boats

    Cheesy Sausage Zucchini Boats

    Cook time: 25 minutes
    Servings: 4

    Ingredients

    • 4 medium zucchini

    • 1 pound ground sausage

    • 1 small onion, diced

    • 1 cup pasta sauce

    • 1½ cups shredded cheese

    • ½ teaspoon garlic powder

    • Salt and black pepper to taste

    Instructions

    1. Preheat oven to 400°F.

    2. Slice the zucchini lengthwise. Scoop out the centers, leaving about ¼ inch around the edges to form boats.

    3. Chop approximately 1 cup of the removed zucchini flesh and set aside.

    4. Brown the sausage and onion in a large skillet over medium heat. Drain any excess grease.

    5. Add the chopped zucchini and cook for 3–4 minutes.

    6. Stir in the pasta sauce, garlic powder, salt, and pepper. Cook until heated through.

    7. Place the zucchini boats in a lightly greased baking dish. Divide the sausage mixture evenly between them.

    8. Sprinkle the shredded cheese over the top.

    9. Bake for 20–25 minutes, or until the zucchini is tender and the cheese is melted and golden.

    10. Let cool for 5 minutes before serving.
