Easy Chipotle-Style Burrito Bowls


Bring burrito night home with this simple, customizable meal that's perfect for busy weeknights.

Ingredients

For the Meat

  • 1 lb ground beef, chicken, or pork

  • 1 tbsp olive oil

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp paprika

  • ½ tsp salt

  • ¼ tsp black pepper

For the Bowls

  • 3 cups cooked rice

  • 1 can black beans, drained and rinsed

  • 2 cups shredded lettuce

  • 1 cup diced tomatoes

  • 1 cup shredded cheese

  • Sour cream

  • Salsa

  • Optional: avocado, jalapeños, cilantro, lime wedges

Instructions

  1. Heat olive oil in a skillet over medium heat.

  2. Add meat and cook until browned.

  3. Stir in chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.

  4. Add 2–3 tablespoons of water and simmer for 2 minutes.

  5. Warm the black beans.

  6. Divide rice among serving bowls.

  7. Top with seasoned meat, beans, lettuce, tomatoes, and cheese.

  8. Finish with sour cream, salsa, and any additional toppings.

Tips

  • Make a topping bar and let everyone build their own bowl.

  • Use leftover grilled chicken or steak to save time.

  • Serve with tortilla chips and fresh guacamole for a complete meal.
